Recipe for Chihuahua Sandwiches

CHIHUAHUA SANDWICH
Yield: one
Ingredients:
two corn tostada shells
2 Tbsp. chopped onions
1 cup shredded cabbage
1/2 cup chili, no beans
1/2 cup pimiento cheese spread
Directions:
Warm chili in a saucepan or microwave. Spread chili on one tostada shell. Top with onions and cabbage. Spread pimiento cheese on the other tostada shell. Put shells together and serve.

The day after "putting it out there"...

I think I might have found the mailbox, although it's not exactly in the form I'd anticipated. Just one day after writing the mailbox post, I went to an author's book-signing, where this quilt was on display. (She'd had it specially made by an extremely talented artist quilter for the book opening.) I sat in the very front row during her talk, and when she first unfolded the quilt, I lost my breath a little. You can't see it in this picture, but there is indeed a skeleton key on the front of the mailbox. No scroll and quill, but it does belong to a writer. So there I go.

Putting it Out There

I'm not certain if the mailbox of my utmost wishes actually exists in this world, and if it doesn't, I wouldn't know how to force it into being. But let me describe it anyway: It's red-painted wrought iron, of course, and Victorian looking. It's the kind on a pedestal, with a locking door. (Only the door doesn't open with one of those new-fangled keys, but with a skeleton key.) On the front and sides, there is a design of a quill lying next to a scroll. There is a quill-shaped flag to signal the presence of out-going mail. Climbing up the base grows a sweetly-scented jasmine plant that makes the mail carrier (and me) smile. There's my wish.

FULL TRAY PASTICHIO
INGREDIENTS
2 lbs pastichio noodles
10 lbs ground beef
2 yellow onions
½ cup of garlic chopped
3 pieces of bay leaves
1 cinnamon stick
3 Tbs salt
1 cup of white wine
3 cups of crushed tomatoes
½ tsp of sugar in the ground beef
10 eggs
1 gallon of milk
1 tsp nutmeg
½ tsp white pepper
1 tsp salt (béchamel sauce)
2 cups of parmagiana cheese Romano
DIRECTIONS
Meat Sauce
-Olive oil sautéed onions & garlic to brown
-add your ground beef chuck
-add your bayleaves, cinnamon stick, black pepper, salt, sugar, white wine, cook for a little bit then add your crushed tomatoes cook for about a half hour.
Boil the pasta Al Dente, strain it.
Rue 1 lbs butter melted with 4 cups of flour to make rue
Bechamel sauce 1 Gallon milk 1 Tsp nutmeg, ½ Tsp white pepper, 1 Tsp salt, Bring it all to a boil, then add your rue, then add 5 whipped eggs, mix thoroughly
Assembling your tray Strain your ground beef , put your noodles in a bowl, mix 5 eggs, ½ Tsp nutmeg, 1 cup of parmagiana cheese, then add your ground beef mix it all together, then add 4 cups of your béchamel sauce in the mix, lay 2 cups of béchamel sauce on the bottom of your tray, then add your meat sauce mix. Then lay the rest of the béchamel on the top. Sprinkle 1 cup of pamagiana cheese on top evenly. Bake at 350 for 45 min to golden brown.

Its usefulness was short-lived however because the Western Union Telegraph line was finished in October of 1861, and the Pony Express became obsolete just 16 months after it began."
